Do they look into what you're majoring in during the college admission

Not specifically, unless the application has changed significantly. Some people mention it on their essays but unlike other academy applications and ROTC scholarships, the Academy doesn't really care what you want to major in until you get here.
 
You spend the first 2 years taking required classes anyway - lots of math, science and engineering.

Not entirely. You have to declare by October of your sophomore year since in the spring you'll be taking at least a couple major's classes. Some cadets who validate several classes or declare early can be taking major's classes freshman year.

True... DD is one of those. In any case, lots of math, science and engineering regardless.
