For re-applicants, I know two new SOEs are required. But if I wanted, could I get three? Would that help at all, or would it just be redundant? I already asked two of my teachers, and I'm positive they both said really good things; however, one of my professors I know would speak extremely high of me, and I would't mind getting her recommendation as well.

Any thoughts?

Also, it is possible to get a nomination through ROTC correct? I asked the Operations Officer at our Battalion HQ and he said no since ROTC is its own commissioning source. Just want to make sure so I don't miss out an extra nomination.

Beyond required SOEs, any additional letters of recommendation can be sent directly to West Point.

Your Operations Officer is wrong. Your PMS can nominate you by filling out a form.
 
Does this mean that I can send in more than three letters of recommendation? I have the three necessary SOEs for new applicants, but have two other very good letters from my principle and Spanish teacher leftover from my nomination applications. Would it be advisable to submit those letters?

Send in the requested number of LORs. If everyone sent in an extra 1-2 LORs, imagine how many admissions would have to look through IF they didn't just throw them all in the trash. Extra LORs need to speak to some special attribute of yours that the others don't -- e.g. an extreme circumstance that only your pastor or principal may know about -- not the standard "he's a good student / leader / person".
