If you have been in contact with a competitive club coach. I know it is not a varsity sport so they cant "recruit", but can they have any influence with admissions on getting a potential athlete into the school?

Absolutely! This has benefits. I'm here in So Cal and my kids have played club and high school. The level of skill is much greater in club and D-1 schools go to club events such as junior olympics to find young talent. Have your club coach write a letter of recommendation and submit it.
