verification of enrollment?

I am trying to pay for the $2000 deposit with scholarships. A scholarship I have been awarded requires "a verification of enrollment letter from the college registrar’s office" before I can receive the scholarship. West Point wants me to meet the deposit requirement before R-Day. So when am I official considered to have "enrolled"? When I accept my appointment? When I report on R-Day? Or on A-Day?
 
It seems like that scholarship is limited to tuition and/or room and board. If this is the case, you can't use it for the deposit.

The scholarship I used to pay for mine was unrestricted and given to me in the form of a check.

That scholarship is not restricted to tuition, room, and board but also applicable to "other appropriate educational expenses" as determined by the organization.

When am I considered officially "enrolled," though?

Once you accept your appointment. If you received a letter from them confirming that they have received your acceptance, that should be enough. If not, I would call your contact with the scholarship and explain the situation.
