My son is in the process of filling out his application and doesn't want to send it until he retakes his SATs again. I told him that he could update his score after he takes it. So my question is "can he update his scores later on" I also told him not to worry about his score there very good. He is just concerned about his writing score, its just average.

Here's my understanding: Starting this year USMMA will do rolling admissions so your son, and everyone, should complete their application as soon as possible so it gets assessed early and often until he/she receives an appointment.
With regard to the Standardized Test Scores, in particular the SAT, as long as your DS designates the USMMA as one of the recipients to receive the score from the Testing Service, his scores will be automatically update. Further as indicated by others USMMA only scores the critical reading and the math score, and they take the two highest scores you receive and use them. Specifically if you take the SATs in September and November and in September you score:
Critical Reading: 650
Math: 570
total: 1220
and subsequently in November you score:
Critical Reading: 600
Math: 620
total: 1220;
for the purposes of assessing your application for admission to the USMMA, the Admissions Staff will consider your SAT scores as:
Critical Reading: 650
Math: 620
for a total of 1270.
My recommendation is complete the application as son as possible, as you suspect and indicate, when the SAT scores are updated, they the application will again be reviewed. If he waits, the application will not be reviewed until his package is complete.
As far as the application/SAT score deadline that is usually in January, though now with the updated process of rolling admissions, I would recommend you contact the admissions staff at USMMA directly and not rely on anything relative to that you get unless you get it fright from "the horse's mouth, as things may be different regarding deadlines for that sort of thing starting this year.
