How come it says that the admission Board only meets on Thursdays, but there are appointments being granted every single day of the week including sundays? Please help, I'm very confused on how it is done.

When Admissions makes a decision it isn't instant that the portal is updated. USNA notifies the MOCs first and usually gives them 3-5 days (roughly) to notify an appointee first from their district (regardless of whatever nom was used). Not all MOCs call. USNA will then update the portal a few days later. That is why you see different days as MOCs call on different days and portals are updated on different days.
 
Maybe someone with inside knowledge of CGO can confirm or clarify, but I don't think the Admissions Board actually determines the Appointment. It is my understanding that the Board merely evaluates whether the Candidate is Qualified for admission (the third Q is the 3Q). From there, it goes to Nominations to match the qualified candidate to the nomination they are being admitted under. Thus, it can be days or months after the Admissions Board reviews a candidate before an Appointment is offered.

You are 100% spot on. Your file is brought to the admission committee to review and deem you qualified. They do not necessarily decide who gets an appointment. It is more like approving your packet and agreeing with your WCS. You are the placed on the NWL and the great wheel of assigning candidates to open slots begins. There is no real correlation between when your file goes to the board and when you get an offer of appointment. It could be days or it could be months.

So the portal status would stay CPR until a decision has been made about appointment, correct? In other words, there is no way to know if reviewed by board or not.

The Admissions board does only meet once a week on Thursdays (that's what my DD was told by the coach). But these are not the people that issue appointments. For example, my DD was given an LOA in October and that was determined by the Admissions board. However, she had some issues with her medical and had to be retested. When there was a delay in rescheduling a retest, someone with a title of "Appointments" after his name contacted her and asked whether she was able to get retested. So I assume that those are two different departments, one for determining WCS and one that takes that info and puts it together with DodMERB stuff, nomination, etc.

Correct. The department is called "Nominations and Appointments" and is separate from the Board.
