I'll give it my best shot to answer all of your questions!
1.) It is never too late to take the CFA as long as it is completed before the due date. Make sure you train hard and take the test when you feel fully prepared.
2.) Can't speak on behalf of West Point Cadets seeing as I am a midshipman. If I am right I would assume you would receive some sort of dress uniform for formal occasions, working uniform for day to day life, and PT gear for working out. Again, don't quote me as I am not as knowledgeable about West Point as others are on this forum.
3.) You can absolutely double major but it will be incredibly hard. I am a Math Major at a stem-oriented university and will also be working on declaring a second major (history) for next semester. From my experience it has been a challenge to time manage ROTC commitments with athletics, academics, and extracurricular activities. At a service academy it will be even harder to double major but it is certainly possible with extra hard work. The way I look at it is if you enjoy what you are doing then you will put in the time and work harder.
4.) You technically don't have to declare a major and can wait until your Sophomore year to declare. On your application you select what major you are interested in pursuing and if you receive an appointment you will be able to declare a major.
5.) I actually have no idea why Kinesiology is competitive, definitely ask an admissions officer about this.
6.) Midshipmen at the Naval Academy average 17 - 18 credit hours a semester which is most likely the same at West Point. It wouldn't differentiate for a double major, you would just have to take more classes when you are a upperclassmen. For me, I am working on the core curriculum for my math major first and then taking some core classes for history. Four classes to five classes sounds about right for a service academy, but it isn't constant like high school.
7.) Yes, you can be in multiple clubs as a cadet. At my university many of my fellow midshipmen play multiple sports and are involved in many clubs. Obviously this would be different at West Point, but you can certainly play an intramural or club sport while being involved in another club.
