So I have taken most of my required courses, but they say trig is required and my high school does not offer trigonometry at my school. What do I do?
 
You can only take what you can take. SAs evaluate high-school academic performance based on your transcript and your school profile. They know what classes are — and aren’t — offered. So if trig isn’t offered, no worries. More importantly, make sure you’re taking the toughest classes your school has to offer, especially in STEM and English.
 
Have you taken pre-calc? I think that’s what counted as trig for me.

I have the choice between AP physics and AP environmental science... AP physics is extremely hard and I don't like the topic so I'm not sure if I will do good, but I know it is a recommended course. What should I do?

Physics is a core course at USMA. I have a strong hunch that taking AP Physics will serve you well, both in terms of getting admitted and of succeeding once there. USMA recommends you take physics for a reason. If in your admissions interview you’re asked why you didn’t take physics, i recommend you not say “physics is extremely hard and I don’t like the subject.” May be true of you and other candidates — and cadets, for that matter — but not helpful when trying to win offer of appointment.
 
Look at your class catalog or talk to your Math department head to see what course Trig is covered in. I never had a course called "Trigonometry" but I took Alg 1, Geometry, Alg2, , Pre-calculus, Calculus. For us, Trig was covered in Alg 2 and Pre-calc..
