I was wondering how much of a difference would 1 or 2 West Point Alumni Recommendations help my file? because I think I can get two of them to write me LOR's

They might be pretty helpful for your MOC nomination applications - it's pretty good if you have officers say that you will probably be a good cadet and future officer....

how much of a difference
Kinda hard for me to quantify... DS had a couple of recommendations from USMA grads and one from a Distinguished Military Grad from Penn State ROTC. Did it make a difference? Probably. How much? Probably a lot more than if he had zero, other than that I'd be guessing.

Hard to think it'd hurt though. I'm not trivializing it, I'd love to know the weighting myself.

What I was told on MY admissions run was that extra LORs (more than the required SOEs) were not too important for my USMA file - even though I am sure it didn't hurt to have them. What I was told (by someone somewhere, I do not recall) is that it is a good thing to have LORs from Officers telling that you will be a great Officer for the nomination process. After all, nominations are the selection of people who the MOC/MOC's office believes will succeed at the Academy and as future Officers.

More important for your nomination application than your WP application.
There are no WCS points given for LORs.
But, feel free to submit LORs with your WP application. They will be added to your file.
