I've been offered appointment to USMA class of 2025, and have seen some conflicting information as to whether April 15th, or May 1st, or another date is the deadline to accept an apoitment. What is the deadline this year? Thank you for your time!

The deadline is May 1st, however you can chose to accept or decline anytime before that.

If the deadline is May 1, why did my RC say that appointments could be sent few days before R-Day?

As people decline their offers those spots will be filled right up to just a few days before R-Day
How do they fill them up with people who has been disqualified or others?
