Does having an ROTC scholarship help with acceptance to schools with large programs like Texas A&M?

Depends on the school and probably only helps in cases where the applicant is at the margin. I can't speak to specifics at Texas A&M.

I’m one of several people I know of at my school who applied early, got deferred, and were accepted after getting a scholarship, which isn’t really proof that it helps, but it definitely doesn’t hurt.

I will speak from a College Financial "Smart" Point of view. Any branch of service ROTC scholarship at any Texas school is 100% Guaranteed money for that school. At Texas A&M an ROTC Scholar regardless of service branch has tuition, books, and fees, paid by the feds, AND then the Texas State-administered "Patriot Scholarship" covers Room/Board/Meals. Win-Win. You get into the school, and your bills are paid for 4 Years from guaranteed outside sources. So on the surface, your chances of acceptance with a 4-Year Scholarship in hand are pretty good.
