Are double majors at the U.S. Military Academy possible? If so, do they have to be related fields? Is it possible to double major in two completely unrelated fields, such as Mechanical Engineering and English or Economics, for example?

You can double major and while it is not required by rules for them to be related, it is impossible to double major in polar opposites (such as your examples). All the double majors I have heard of have been things like a foreign language and an area studies/international relations/economics etc. An engineering major, as stated above, eats your schedule so you won't be able to really fit another seeing as USMA crams into 4 years what most engineering schools require 5 to accomplish.

I think I heard of someone triple-majoring while at the SLS?

It all boils down to how many classes you can take that are interconnected between 2 majors, and how many you can "skip" (not sure about the exact term here).
