What does the portal for USAFA look like when something changes? Does it just go from "candidate" to ??? I know with the USNA several have posted a screenshot of the yellow envelope saying "Your decision is ready" Just wondering what exactly we are looking for...

You don't really have to be checking the portal as you'll get the notification through your email, but iirc the portal has a new "click to view" letter and a box where you can accept the appointment.

Yeah I think in the application status box your status changes to appointee, and that is where you get the option to accept or decline.
