While knowingly procrastinating on a writing project this morning, I researched a menu for the Milton Inn in metro Baltimore, the latest venue from local restaurateur Cindy Wolf. Mixed in among some other over-the-top French kafoofery menu items, a few with bacon used in recognizable ways, there was one dish that caught my eye. It had DUCK BACON! On a venison burger!
I have not had this. Is it duck belly meat, suitably duck fat streaked, smoked and cured? I am all for duck fat fries, and think this bacon could have merit, though no porcinity is involved. Is it merely Baconized Bird, an upscale version of t**k*y bacon?
Enjoy the menu. Read it skim-fashion to just absorb, as the Copy & Paste action via iPhone seems to have separated dish titles from prices and descriptions. No doubt user error.
