To get us back to authentic bacon, I re-heated some excellent pizza tonight, as DH decided to finish off the last bowl of a Cajun 15-bean soup I made earlier this week.
My pizza was from a favorite hole in the wall in Alexandria, VA, where I was at a non-profit board meeting earlier this week. Let’s get to the pizza - you will love it or hate it - as it has everything I liked since I didn’t have to share:
- Hand-tossed 10” thin crust pizza, crispy where it needed to be, chewy where it needed to be
- Painted with house-made extra-garlicky pesto
- Generous portions of ricotta and fresh mozzarella in melting dollops, grilled thin-sliced cremini mushrooms, fresh basil chiffonade, and generous handfuls of crispy bacon pieces, with just a bit of grated grana padano and a few red pepper flakes.
I ate half and carefully brought the rest home. Still tasty.
