Describe your desert island bacon sandwich. It’s a concept, don’t worry about power, appliances (sure you can have a panini press), etc.

So many choices to contemplate (BLT! fresh turkey!), but here is mine. Nothing exotic, just my favorite version of things.

Grilled cheese using:
The late bake extra sour sourdough from the Columbo or Parisian Bakeries (both sadly now closed) in the San Francisco Bay Area
- extra aged vintage cheddar (Wyke Farms, Cabot, Canadian Black Diamond, other seriously extra sharp) or Sonoma Jack or aged Gouda
- crispy bacon in indecent quantity
- paper thin sliced tomatoes from the farmer’s market or still warm from your backyard
- tiny dollops of bacon-onion jam, just a few here and there
- unsalted butter for grilled sides
 
I like a lot of bacon on my BLT. Leaf lettuce or spinach. Beefsteak tomato slices (2). Toasted seeded rye, or black pumpernickel bread.
And I'm sorry, but I put fat free miracle whip on it (in direct contact with the tomato slices), with a lot of black pepper.
(I like the taste of mayonnaise, but knowing what's in it kind of makes me throw up in my mouth a little.)
 
Unsalted Butter? Are you making Lemon Cookies or a bacon sandwich? Was sounding good, then the needle scratched at the end.

The truly prodigious bacon and embarrassingly generous cheese provide enough salt for me. I fall in the keep it less salty side of the continuum. Feel free to stock salted butter on your desert island.

Miracle Whip and mayo are essentially oil, eggs, vinegar to create the emulsion, but “the whip” has a lot more stuff, giving it a distinct taste, especially the higher level of sweetener elements, than mayo. I grew up in the South, and there are definitely Whip camps and mayo camps. Each has their own distinctive marriage with bacon.

The Non-Fat Whip:
Ingredients
Water, High Fructose Corn Syrup, Vinegar, Modified Food Starch, Sugar, Soybean Oil*, contains less than 2% of Salt, Cellulose Gel, Egg Yolks*, Citric Acid, Artificial Color, Lactic Acid, Xanthan Gum, Mustard Flour, Cellulose Gum, Spice, Paprika, L-Cysteine, Dried Garlic, Yellow 6, Natural Flavor, Beta- Carotene (color), Artificial Flavor, Blue 1, with Potassium Sorbate and Calcium Disodium EDTA as preservatives. *Trivial source of fat and cholesterol.

Hellmann’s Mayo:
Ingredients
Soybean Oil, Water, Whole Eggs And Egg Yolks, Vinegar, Salt, Sugar, Lemon Juice, Calcium Disodium Edta (Used To Protect Quality), Natural Flavors Mrp#: 83198841

A fine desert island choice, either one. I’m a mayo, by the way, sometimes make my own, the garlicky aioli stuff.

I have two versions of a bacon sandwich, depending on available ingredients.

First: Standard white bread, untoasted. 9 pieces of bacon, 3 across in three layers alternating orientation, then two leaves of iceberg lettuce. Miracle whip on both pieces of bread. Take the tomato and throw it in the compost pile.

Second, which is more interesting and was created by myself in desperation 30+ years ago when our household income was in the mid $30s and I had to make do with what was available until payday. Two slices of rye bread toasted, a slathering of my wife’s homemade rhubarb jam, and a couple of slices of bacon. For some reason the combination of flavors works, and I have made them that way since when I can.

Is that legal where you live?

I should clarify my earlier BLT. When I say mayo, I mean Duke's. I've lived in the south 35 years. My wife has lived in the south her entire life. There IS NO other mayo. Bt we should start a separate thread if we're going to have that debate. We're here to discuss BACON!

Duke’s is a great mayo because there is no added sugar or sweetener as in other mayos and whips. I recall recipes such as Duke’s chocolate mayonnaise cake and Duke’s chocolate chip banana bread, so moist. I may have to make that banana bread and add bacon...
 
Team make your own Mayo here! Sometimes even with avocado oil instead. Easy once you get the hang of it and Oh. So. Good.
 
I knew I would get flak for the fat-free Miracle Whip. I understand, completely. I try to strike a balance between tasty and healthy. I usually err toward the healthy end of the equation, but still eat a lot of things that "aren't good for me" now and then. The trick there, is moderation. Fat-free Miracle Whip probably isn't all that "healthy" per se (with the added sugars), but at least it doesn't have raw eggs in it. Blech!

I taught myself long ago that "food is fuel" rather than "food is fun", but don't get me wrong here. I'm not living on rice cakes.

My desert island has a pre-mixed cocktail dispenser.
Margarita (Lime, Strawberry, Mango)
Bacon Bloody Mary
Daiquiri (classic, lime)
Fresh Water (Ice Cold)
 
DS does not like bacon. He really doesn't like beef or pork, He is a fried chicken NUT! I hope his dislike of bacon will not disqualify him for military service. I don't think dislike of bacon is a disqualifying condition listed in DODI 6130.03. He can turn this into a plus. More bacon for his buddies!!
