Important matters concerning the existence of Humanity - BACON

I had some crumbled bacon this morning on a fried egg. I also had a cup of Death Wish coffee. It was good.
 
I admit to getting the Food Network email feed, photo below credit to them. Made it last night, Warm Tortellini Salad with Roasted Vegetables, because we are eating our fresh stuff before we excavate frozen Trader Joe’s veg from the freezer.
Why am I posting this? Because I added lots of crispy bits of bacon. The Food Network doesn’t understand the Bacon For All, All For Bacon battle cry as well as they should.

Get this. Not kidding. But brilliant. As in why didn’t I think of it ?

Food Network last night, Diners Drive-ins and Dives, featured a restaurant that smokes their own pork belly, 6 to 8 hours, chunks it up and grinds it into ground bacon. Makes patties, grills them up, and makes bacon burgers. Made their own potato bread buns, adds fresh heirloom tomatoes, lettuce, a slap of mayo and BOOM 💥 a BLT to knock your socks off. Wow. Not that’s on my bucket list.

Brilliant. The housemade potato bun sealed the deal for me. Around here, I get the Schmidt’s potato buns for hot dogs, burgers, summer sandwiches. Schmidt’s Bakery has been in the Baltimore area since the 1880’s.

There is a specialty butcher I occasionally go to for certain cuts of meat. I bet I could ask him. After we get through this health crisis, it will be something to look forward to.
 
My company’s CEO is an outstanding leader. Upon visiting a grocery store and seeing the barren shelves, he set out to acquire a sizable load of milk, eggs, bread and bacon. He then informed the entire headquarters staff that anyone who needed it could come get a share. Truly amazing gesture. And that settles it: Bacon is indeed and forevermore a food staple!

No, but its more than welcome on my table ! The horror, I just realized that we don't have any bacon for my traditional Sunday breakfast.
All good though -- I've got some ribs to smoke this afternoon.
