I went to the Amish Market last time I was there as well. The pretzel dogs looked good, but I did not imbibe ( I use this word, because I am a recovering HotDogAholic).

Now, if they had a bacon-filled fresh hot pretzel roll, possibly with a chunk of melty extra sharp cheddar inside and a dollop of bacon jam on the side...

Never has something so “off topic” been so “on topic.” DD’s club sport team headed to Double T last night after they beat AF (with significantly less suspense than the football game) and I respectfully had to pass. Early morning flight out of BWI precluded me from pondering the porcine possibilities. Maybe next time. (On the bright side, did pick up a half-dozen pretzel dogs at the Amish Market before the football game. DD devoured one in three bites right before her company stepped off for the march to the stadium.)

No excuses. Double T is open 24 hours. OMG, that dessert case.

I just saw a TV ad for Sonic’s new “Garlic Butter Bacon Burger.” Is the burger part worth eating? I don’t think I’ve had a burger there, only shakes.

We are having these tonight, with apricot preserve glazed chicken thighs and picked this morning green beans in stock with new potatoes.

When I was young, naive and narrow-minded, I thought that chicken breasts were high cuisine (particularly the boneless, skinless variety). Now that I’m grown, sophisticated and more worldly — somewhere out there, my buddies are snickering — I’ve discovered that chicken thighs are where it’s at. And apparently, even more so with bacon jam.

Now back to our regularly scheduled programming.
 
Fun Fact: Trader Joe's sells a 1 lb. package of applewood smoked, uncured bacon ends and bits for $4.49/lb. No nitrates, nitrates, phosphates, or sulfates. It may even be the healthiest thing you could ever eat (that is, compared to the other stuff on this thread).

I use it for tomato sauces and for broccoli rabe, inter alia.

Quick broccoli rabe recipe: render the diced bacon fat, add a lot of garlic and some red pepper flakes, remove the goldened garlic and crisped bacon bits to add back later on, saute washed broccoli rabe, cut into thirds or so (bottom half inch trimmed and offered to the dog), add stock (chicken, beef, vegetable, or water) to cover, bring to a boil then simmer for a while. Bonus sweetener if you add ribbons of sun-dried tomatoes. Great by itself as a side dish or mixed with pasta and sausage - even better the second day - and topped with pre-tariff cheese.

This post reminded me of one of my early “Company Chicken” dishes using chicken breasts. It involves bone-in, skin-on breasts. A mixture of bacon and Boursin herbed cheese was stuffed under the carefully loosened skin and secured with a poultry pin. Skins were basted with olive oil and an oregano-thyme mix, and chicken was baked skin-up until skins were crisp and golden and chicken was done. Lots of flavor from crisped skin and stuffing. I would choose fresh never frozen pieces.

I have to look for that one and resurrect it. It was worth the effort.

I am sure it could be adapted for skin-on thighs.

Like I would have a package of bacon still around for seven days past the sell-by-date.

Wen DD and DSIL are at the house for a visit the breakfast menu includes, 1Lb Bacon for SIL and 1Lb for the rest of us. Unless we can sneak some of his.
