Fun Fact: Trader Joe's sells a 1 lb. package of applewood smoked, uncured bacon ends and bits for $4.49/lb. No nitrates, nitrates, phosphates, or sulfates. It may even be the healthiest thing you could ever eat (that is, compared to the other stuff on this thread).

I use it for tomato sauces and for broccoli rabe, inter alia.

Quick broccoli rabe recipe: render the diced bacon fat, add a lot of garlic and some red pepper flakes, remove the goldened garlic and crisped bacon bits to add back later on, saute washed broccoli rabe, cut into thirds or so (bottom half inch trimmed and offered to the dog), add stock (chicken, beef, vegetable, or water) to cover, bring to a boil then simmer for a while. Bonus sweetener if you add ribbons of sun-dried tomatoes. Great by itself as a side dish or mixed with pasta and sausage - even better the second day - and topped with pre-tariff cheese.

As to the prescriptions, I have a good friend who got the 'you have cholesterol issues, you need to take this pill everyday' info. He said heck no, did some research and switched his diet to 99% Paleo. The man eats half pound of bacon with 4 eggs every morning. And Sunflower butter by the jar. And in 6 months, he had no cholesterol issues anymore. Moral of the story, bacon has healing powers.

When I'm drinking two buck Chuck, I'll put the cork back in. If it's the good stuff - then that means we have friends over - and that bottle is a goner.
 
Crispy or chewy?

We are a house divided. Presently preparing both for the grilled burgers, which are a half and half mixture of made at the butcher shop hamburger and Italian sausage....
 
The benefits of bacon include you can smell it cooking from the driveway. This leads to exercising the salivary glands as I approach the house...guess who's makin' bacon.

I always knew there was something about you that reminded me of Mark Twain, another one-time resident of upstate New York. He said the difference between the right word and the almost right word is the same as the difference between lightning and a lightning bug.

Broccoli rabe is different from broccoli in the same way. As Twain said, it is a large matter.

Well I may be in the minority...I do have a slightly OFF sense of humor. But this went into my daily “good morning” text to my family this morning [emoji23]
 
I went to the Salty Turtle Brewing Company in Surf City NC today for the unveiling of their Octoberfest brew. I actually skipped that and went with the Kolsch. I love their Kolsch. Anyway the food truck there had a "Bacon Jam Burger"... burger, bacon jam,, two strips of bacon, lettuce and tomato. I would have been scared off by something called bacon jam but thanks to @Capt MJ 's post on said accompaniment I decided to go for it. Delicious. First time I ate a burger without additional condiments. Thanks Capt MJ!
 
Can we lobby the Amish Market in Naptown to put a Bacon Log (like a Pretzel Dog, only much better) on their menu? They have a Chicken Bacon Log, but that seems terribly diluted, doesn't it?

That burger sounds excellent! Bacon AND bacon jam, nothing bacon-shy about that.

Speaking of bacon jam, I was actually thinking about making a PB & Bacon Jam sandwich on toasted sourdough as an experiment this weekend. Still contemplating whether it will need something else, maybe a bit of hot pepper raspberry jam (the kind you can buy in fancy food aisles.)

That sounds so good. A bit of hot pepper jam should set it off but it would be great without it. Hell, fix two and have one each way!
