+1 @THParent, those are the potatoes I bought. I normally would shred my own but recipe said moisture and browning was issue so I opted to buy those.
@Capt MJ I too try to use mostly from scratch. In this instance I think it was worth using the bagged. texture was great. Only thing I noticed was how darn long they had to be in waffle maker to brown. I wasn't in a hurry and the 1st batch tasted great with sour cream and a glass of red while I waiting for the 2nd batch. Husband and DS (running out door to flex conference while reminding me to pick up his suit from cleaners for Senator interview Saturday) both took them, reheated in traditional toaster and they were yummy. You could eat them on the fly or on a plate with perfectly runny egg, maybe with some hot sauce or salsa. I like that there is no flour, just the eggs to bind.
