+1 @THParent, those are the potatoes I bought. I normally would shred my own but recipe said moisture and browning was issue so I opted to buy those.
@Capt MJ I too try to use mostly from scratch. In this instance I think it was worth using the bagged. texture was great. Only thing I noticed was how darn long they had to be in waffle maker to brown. I wasn't in a hurry and the 1st batch tasted great with sour cream and a glass of red while I waiting for the 2nd batch. Husband and DS (running out door to flex conference while reminding me to pick up his suit from cleaners for Senator interview Saturday) both took them, reheated in traditional toaster and they were yummy. You could eat them on the fly or on a plate with perfectly runny egg, maybe with some hot sauce or salsa. I like that there is no flour, just the eggs to bind.

Meeting the bacon mention criteria so as to avoid the all-seeing recriminatory eye of the thread creator, I am making those sour cream bacon pancakes (mentioned in the early stages of this thread) tonight, but going savory. Leave out sugar and sweet spice, add a bit of garlic powder and dried basil, add some sun-dried tomato flakes. I will re-hydrate those by adding them to the wet mix before adding dry. Big baby spinach salad on the side with other veg.

The ubiquity of bacon…

So...we host exchange students. Their HANDS DOWN favorite thing is bacon. We stock those ritz crackers in the pantry. Also usually have Bacon Flavored SPAM (yes...you read that right) in the cupboards. About 3$. A favorite is Bacon Flavored SPAM fried rice. No joke.

On a cruise ship on a new line we were trying a few years ago, the breakfast buffet had Irish bacon, English bacon and American bacon. The line for the American bacon was the most robust. The English bacon is cured but usually not smoked, and it’s from the tenderloin or pork loin, mostly lean. It’s not what tastes like bacon to me, but it’s fine as a breakfast meat. Try as I might, on our many trips to Ireland and those lovely full Irish breakfasts, I can’t get past the hugely salty (to me) Irish bacon. It is also a back bacon, cut from the lean loin, whereas American is cut from the fatty belly and side. As Goldilocks surely said at some point in her life, “American Bacon is just right.”

I will have to try this Irish bacon. My wife told me yesterday that she wants to go to the Notre Dame-Navy game in 2020.
Saturday, August 29th, 2020 here we come. She said if we can't get tickets, she's fine sitting in a pub watching on TV, as long as she's in Dublin.

The Alumni Assn offers packages with or without tix. Look for that link at top of faq page above. As a veteran of the last two, it’s one big party. Given Notre Dame’s Fighting Irish colors and USNA colors, I think every bar in town declared for one or the other, and Dublin is extremely welcoming. There is plenty to do and see there. The mids who go bunk over at Trinity, as I recall. Irish bacon will be available, along with black sausage, soda bread and scones with that killer Irish butter.

I have always wanted to go to Ireland, on my wish list. But, back to BACON, when visiting Glacier National Park our daughter selected this place for breakfast. Definitely worth the wait, one of the best breakfasts I have ever had.

I did have to ask what KC Bacon was, Kansas City Bacon, mind blowing. Not the same texture as traditional but a worthy competitor.

Great eats in that town, I suggest mid September. You will need at least a week to eat and tour the park which is beyond beautiful

Okay, I couldn’t resist - while checking in on the Important Matter: Coffee thread, I thought, surely there is a nexus between Bacon and Coffee.

There is. Just google “coffee glazed bacon.” All kinds of recipes come up, which I won’t be making due to my disinclination toward coffee, but surely some of you will. I will look forward to the field reports.
 
Bacon (and ham) are going into the Loaded Bacon Potato Soup that’s for dinner tonight, along with fresh crusty bread and a nice Cesar salad.

I think this is one of the most memorable Off-Topic threads we have had, with all kinds of people popping in. A very joint place to hang out while more seriously addressing questions in the other forums.

Granted, it reads better than it sounds. And probably doesn’t solve the “old and fatty” issue.

If she lets the bacon get cold in the pan, she could be “Miss Congeal-iality.” Or not.
