Important matters concerning the existence of Humanity - BACON

All you need is a little garlic white sauce drizzled over that fine plate. When I was at the Naval Postgraduate School, I went to this little breakfast place at least once a week on days when my class load permitted. They would make a great breakfast plate and then drizzle this magic sauce over it all. Not gravy-style coverage, but just a buttery rich garlicky white sauce drizzle. Made for excellent toast-mopping at the end.

I meant to take a photo of a concoction the other day but consumed it before the thought took hold.

I made fresh strawberry jam with some very fine fresh berries, and had a hot bacon and jam sandwich on a buttered, toasted Naval Bagels ET bagel, fresh out of its bag.

@THParent and @Capt MJ You guys are killing me. I'm sitting here wolfing down some oatmeal so I can run out and mow the lawn. I make good oatmeal but it doesn't have bacon or compare to your descriptions.

for all of you who like the flavor of smoke and like to experiment with smoking various things (in your smoker or your grill, of course).
For those that haven't experienced it... strong recommendation for the Big Green Egg ! They are pricey , but worth it. I may have mentioned it before (my kids say I tell the same story all the time), but VP Purchasing bought it for Fathers Day a few years ago, and she wishes she did it years earlier. I'm not a "foody",and usually don't really care what I eat -but I love to cook on the Egg. You can do about anything, including baking in a Dutch oven.

my stomach is rumbling. Customers are looking at me funny. You guys are killin' me!

Here’s my mom’s recipe for a quick summer berry jam, the one I made to have with HOT BACON on a toasted bagel in my post above. No canning rigmarole or pectin required. Have it in a bacon and jam sandwich, add PB for a PBJ&B.

Summer Berry Refrigerator Jam
(Makes about 1 jar. Easily doubled or tripled.)

1 lb fresh strawberries
1 1/2 cups sugar (swap in 1/4 c dark brown sugar for 1/4 c. of the white for richer taste if desired)
2 Tbsp fresh lemon juice
½ tsp lemon zest (Optional, but I like it)

Wash, hull, stem and slice the strawberries.
Add them to a large heavy sauce pan with sugar, toss gently to coat.
Stir continually but gently over medium heat, and bring the strawberries to a boil.
Once boiling, add the lemon juice and zest (if using).
Boil for about 15 minutes, or until the jam reaches 220F. The temp is key. Jam will not set if temp isn’t reached.
Stir often, to make sure the jam doesn’t burn.
Pour into a clean jar and allow to cool.
Cover and refrigerate.
Use within about 2 weeks (if it lasts that long).

Thanks, will be stealing this and using this weekend. Have fresh berries (not from my garden, but on sale and look good at grocery store)

Too hot and sticky to do normal dinner. Emergency punt to Something With Wright’s Bacon.

Sour cream pancakes topped with fresh raspberry sauce and a half-pound of crumbled cooked bacon

As someone eating keto, that looks great. Papa Murphy's has a keto pizza. Just the toppings in a cardboard container you bake at home. Bacon is an option, but using bacon for the "crust" is pure genius.

Layover in Denver. Fresh kettle chips with prosciutto and Gorgonzola and a melted Gorgonzola sauce. Yum. I love all things that pigs gift us.

A morale-builder was required tonight. Bacon cheeseburgers, with a side of raw veg as the antidote.

A simple BLT for breakfast with a fresh yellow tomato straight from the garden. I had to settle for arugula in stead of the cool crispness of iceberg.

Unfortunately the lovely photo I took won't upload,, and since I've already eaten it, you cannot gaze upon its perfect tastiness.
