Grilled cheddar and jalapeño popper sammich​



cream cheese ( I personally like fat free cream cheese, but use whatever you like)
jalapeño or green chilies finely chopped (remove the seeds to reduce heat, if you like)
ground cumin (sprinkle to taste)
garlic
peeled and crushed (or the minced stuff in the jar)
real butter
sourdough or rye bread
good cheddar cheese
coarsely grated (cheddar cheese is not yellow, by the way. Get some good cheddar!)
crispy cooked bacon
freshly ground/cracked black pepper


Mix the cream cheese, chilies, cumin, and garlic. Spread on one or both slices (depending on how many calories you want) and grind some black pepper on top. Put grated cheddar on top, and add at least two slices of bacon. Butter the outside of your "sammich", and cook in your favorite skillet, until it's crispy.

I earned major marital points tonight.

Roast center cut loin of pork with a spicy herb rub and BBQ sauce glaze and homemade buttermilk biscuits - but - I got a crazy idea and made a favorite red cabbage and apple slaw with honey lemon dressing, and offered crumbled cooked bacon as a topping at the table. Really, really good.

Of course, since there is no such thing as leftover bacon, I spooned some crumbled bacon into my buttered biscuit.

Spartan food the next few days.
 
I call Brussels Sprouts "cat brains". I love them.
 
Last night we had pork chops, seasoned with Penzey's pork chop blend, nicely browned, then deglazed in the pan with white wine and stock, added some chopped apples, and let them finish. Made homemade applesauce, leftover creamy rich potatoes au gratin (with some herbed cheese), and some bacon-wrapped asparagus. So yummy. The best part was our DD came over to do laundry and brought both granddogs.

The crisis is that our local stores are running low on bacon. The next time it's stocked I am hoarding Wrights. To hell with toilet paper.
