Time for Bacon Grease Class! 🛎🛎🛎🛎

I grew up in coastal GA. Bacon grease was always refrigerated, because it can go rancid. Mom used a jumbo glass PB jar. Coffee cans were also a norm. Anything wide-mouthed and sealable that allowed for easy scooping.


 
Today’s late lunch: grilled sourdough, melted Toma cheddar cheese, heirloom tomato, thick applewood smoked bacon, an Anchor Steam beer and a view down a steep hill on California St., a musical bell regularly sounding at intervals.

Yes, ding ding, and we are now settled in at the Top of the Mark, enjoying the view. In the way things happen for veterans, we have just met another couple as we talked with the bartender. The man is a retired GO, USMA ‘66 (DH’s ring and ‘66 man’s class ring were competing for cubic volume and gleam, instant recognition), and we immediately launched into a “hey, do you know???” session.
 
Great view from there of a beautiful city that was a huge part of my childhood.
 
I was downloading some targets from the NSSF, and lo and behold there is a "crossed bacon strips" target. :)
 
While knowingly procrastinating on a writing project this morning, I researched a menu for the Milton Inn in metro Baltimore, the latest venue from local restaurateur Cindy Wolf. Mixed in among some other over-the-top French kafoofery menu items, a few with bacon used in recognizable ways, there was one dish that caught my eye. It had DUCK BACON! On a venison burger!

I have not had this. Is it duck belly meat, suitably duck fat streaked, smoked and cured? I am all for duck fat fries, and think this bacon could have merit, though no porcinity is involved. Is it merely Baconized Bird, an upscale version of t**k*y bacon?

Glad to see The Milton Inn reopen even if under new ownership post all that virus stuff the past couple of years. It has been an extra special occasion favorite for DW and I for quite some time.
 
DH and I had a fancy steakhouse meal tonight. The complimentary starter was a shot glass of spicy tomato soup with smoked paprika and bacon, with a blue cheese crouton, and slim bacon-cheddar breadsticks. Very fine. Then prime steaks, green beans with bacon and most decadently, serious onion rings. Happy to have 3 bacon passes in the same meal.
