Important matters concerning the existence of Humanity - BACON

To get us back to authentic bacon, I re-heated some excellent pizza tonight, as DH decided to finish off the last bowl of a Cajun 15-bean soup I made earlier this week.

My pizza was from a favorite hole in the wall in Alexandria, VA, where I was at a non-profit board meeting earlier this week. Let’s get to the pizza - you will love it or hate it - as it has everything I liked since I didn’t have to share:
- Hand-tossed 10” thin crust pizza, crispy where it needed to be, chewy where it needed to be
- Painted with house-made extra-garlicky pesto
- Generous portions of ricotta and fresh mozzarella in melting dollops, grilled thin-sliced cremini mushrooms, fresh basil chiffonade, and generous handfuls of crispy bacon pieces, with just a bit of grated grana padano and a few red pepper flakes.

I ate half and carefully brought the rest home. Still tasty.
 
Y’all would be proud. 3 of my Holiday Weekend recipes have bacon in them.

I did Wright bacon two ways this morning. On the left is the classic, in the oven on a pizza pan at 400° F. for 20 minutes. Perfect.
On the right is 6 minutes in the air fryer. Fast, but not perfect. Good if you are pressed for time, though.

Filled up my jelly jar with bacon grease too. Win-win.

Surprise hit of the New Year’s Eve dinner (roasted Prime grade 4-rib ribeye roast, Yorkshire pudding, baked mushrooms in garlic cream, arugula with citrus vinaigrette) which I realized at the last minute LACKED BACON: an appetizer dip cobbled together from softened cream cheese, sour cream, halved fresh raspberries, a small can of chopped roasted jalapeños, drained - and crumbled bacon.

I served the dip with sea salt pita chips. Creamy, zingy, tart fruity and smokey bacony goodness. DH swears leftover dip is going on a Naval Bagel tomorrow morning as we watch the Rose Parade.

Was that next to the gummy Mac and cheese? I saw that at our local grocery store 🤢

Honestly, it’s probably like licorice. The really sad part, is the $7.99 price!!

Settle in to watch this when you have a few minutes. There is something supremely precise, organized and oddly soothing about this, including the musical soundtrack. And - BACON plays a critical role.

200 degrees C ~ 392 degrees F.
