My math teacher was talking to me about the letter of recommendation that they were writing for me. She brought up the idea that all the other math teachers from my previous years in HS wanted to sign it as well with their own statements about me (not my idea but got me wondering) Is this a good idea or does it stray from the idea of it being a single letter of recommendation

As a general matter, my recommendation is to follow instructions, whether they are instructions of a SA or nominating source. If the nominating source asks for a single recommendation from a math teacher, my thought would be to comply. One way of complying, but also showing the deep support of your prior math teachers would be to have the teacher writing the recommendation speak about the support of the others in addition to her/his support.
