No Soup For You!!!

I make potato soup when it gets cold outside.

Start with about a gallon of water in a stock pot and turn on the stove.
Put in a bunch of potatoes cut up into bite-size pieces. (I leave the skins on, but you can peel if you desire.)
Add two big red onions, diced.
Add 6 celery stalks, diced.
Add 2 tablespoons minced garlic.
Add fresh sliced mushrooms to taste.
Add a BUNCH of cracked black pepper. I'm talking 4 or 5 tablespoons.
Added about 2 teaspoons of salt.

Bring to a boil and cook until potatoes are how you like them and remove from heat.
Add 1/2 stick of butter and two (2) cans evaporated milk.
Stir and serve with a couple of big croutons floating on top.

Am I allowed to add bacon bits when I get it in the bowl? I’m going to do it anyway. Potatoes, onion and bacon are old friends.
 
This is on the menu for tonight!! Well loved, as you can see. My boys used to request this be ready for them after the last match of their wrestling season. And I would also make batches for their buddies. So good with a dash (or 10) of hot sauce, and a good side salad.

15 Bean Soup with Bacon Garnish, Adapted from Alton Brown, For 6/7-Qt Slow Cooker
*Requires overnight soaking for best results.

1 20 oz bag Hurst’s Hambeens, 15 Bean, Cajun flavor (or your choice)
8 c. water
1 Tbsp kosher or coarse salt
Soak beans overnight at room temp in water and salt (the salt helps tenderize the beans) in a glass or plastic bowl.
Drain beans and rinse in a colander. Check for any stones or stem debris.

4 c. unsalted chicken or vegetable stock or broth
3 c. water
1 bay leaf
1 yellow onion, diced
1 clove garlic minced (can sub equivalent garlic powder)
2 tsp chili powder (I like Penzey’s online or store)
2-3 c. diced ham, fully cooked sausage of your choice, leftover beef, turkey or chicken carcass “pickings,” etc.. Rinse any honey-glazed ham to get excess sugar off.

Reserve these items to add later, do not add at start. Acidic items toughen the beans.
1 15 oz can diced or petite diced tomatoes, or use fresh chopped Roma tomatoes
Juice of 1 lemon
Seasoning packet that came with beans (you can use this or use Cajun seasoning or other spices, herbs and blends - watch for over-salting if the blend contains salt)

Crumbled cooked bacon to top soup when serving.

Add beans, liquids, bay leaf, onion, garlic, chili powder and protein to slow cooker. Cook on Low 5 hours.
Spoon out a small portion of beans to taste for tenderness and smooth interior texture. Cook another hour on low if needed, or longer. Older beans can take up to 7 hours. If tender, stir in tomatoes, lemon juice and flavor packet. Let cook another half hour on low or until soup is thickened.

This is very good, easy, and yes, I just pour stuff out of jars. It’s a post-football game mid favorite.


“Fleet” Steak Chili for a Crowd
* For a 7/8 qt slow cooker, can easily be halved
This is a mild chili. Provide pepper sauce at the table for those who want more heat.
Total cook time: 6-8 hours

3 lbs round steak
2 yellow onions, chopped
1 green bell pepper, diced
1 red bell pepper, diced
4 cloves garlic, chopped
2 Tbsp allspice
1 tsp cayenne
4 Tbsp chili powder (Penzey’s online or store)
5 tsp cumin
2 15 oz cans diced tomatoes
64 oz El Paso Thick & Chunky Medium Salsa
16 oz El Paso Thick & Chunky Chipotle Salsa
(adjust proportions within the 80 oz of salsa to taste, subbing in mild or adding more chipotle, Thick & Chunky is key)
Optional: 1 15 oz can kidney or pinto beans; add these the last 2 hours.
Garnish: your favorites such as shredded cheddar or pepper jack, chopped onion, etc.

Optional:
Cilantro Cream
2/3 c sour cream
1/4 c minced fresh cilantro
2 Tbsp fresh lime juice
Mix until well combined. Store in small covered bowl in refrigerator until serving. Add a dollop to top of chili in bowls.

Brown the round steak in a hot pan with a little olive oil for a few minutes each side, set aside until cool enough to handle.
- Brown but don’t let burn the onions in the same pan, adding a little more olive oil if needed.
- Cut the round steak against the grain into 2”x1/2” strips.
- Add meat, onions, garlic, bell peppers, seasonings, tomatoes and salsa into slow cooker. Mix well.
- Cook on low 5-6 hours. Add beans, and cook another 2 hours.
 
For people who are extremely lazy (points index finger at himself), I highly recommend the Crab Bisque soup from Camerons Seafood. You can google their website and they can ship next day. "Heat and Eat" or add some rice or oyster crackers if you like.

For hopeless bachelors who need a recipe to boil water (finger still pointing at myself), there is an awesome cookbook called "A Man, a Can, and a Plan". Absolutely should be on the Department of Defense Required Reading list. 🤓

I have other “serious” chiles, specialty chiles, handcrafted from scratch chiles, but this One With The Salsa Jars is a hit every time. It did indeed win a chili cook-off at MCB Quantico. It is meat-forward, with few or no beans, and rich flavor.

Here's one of our favorite Tastes Like It Took Effort soups:

Corn Sausage Chowder

1 lb. hot Italian sausage
1 cup onion, coarsely chopped
4 cups potatoes, peeled and chopped to ½” cubes
1 t salt
½ t dried marjoram, crushed
1/8 t fresh ground pepper
2 cups water
1 (17 oz.) can cream corn
1 (17 oz.) can whole kernel corn, drained
1 (12 oz.) can evaporated milk

In a kettle cook sausage and onion until sausage is brown and onion is tender. Drain on paper towels. Return sausage and onion to kettle and add potato, salt, marjoram, pepper and water. Bring to a boil, then reduce heat and simmer until potatoes are tender (about 15 minutes). Add cream corn, whole kernel corn and evaporated milk and heat through.
 
Made some Senate Navy Bean Soup in the instant pot for dinner tonight, accompanied by a salad. Simple but yummy. Easiest soup i've ever made. Takes the chill out of a cold night.

Guess it depends on what recipe you use. I used chicken broth instead of water and doubled the garlic it called for.

Who knew that the Senate and the Capitol had competing bean and ham soup recipes? How interesting. Will make the Senate version as soon as I acquire a small ham with a meaty bone. Thanks!
