What are the most common majors for pre-med cadets (besides life science)? Has any cadet ever majored in environmental engineering and gone to medical school straight from West Point?

In general, no. An EV major will not allow you sufficient time to take all the required lab courses for med school. There is a curriculum in the Chem & Life Sciences major designed to get you all those lab courses.

Honestly, if a physician is what you want to be, West Point is not the best place for you. Some will tell you otherwise, but the mission of West Point is not to make doctors. If you wouldn't be happy as a regular line officer, don't go to WP. Period. The Army has many ways of making physicians.
 
There are many paths to many courses in life. If you want to be a doc and you want to go to WP, go for it. You're going to be hauling ass, but people do it. And I believe life sciences is the way to go....
 
Also be aware that there is a cap of 2% of each class that is permitted to go straight to Medical school after graduating from WP.
