I have A's in Physics and Algebra in high school.

Make sure you have trig and or pre-calc on your schedule next year. It wouldn't do you much good to get your ACT Math up to a good score and then to be academically disqualified for not taking a sufficient math class.
 
The AP classes I've taken are World History, US History, Biology, Government, World Lit and Composition I & II. Is that good?

Well that's better than not having those. But the curriculum, regardless of your major, is heavily math and science oriented. Therefore Calculus and Physics or Chemistry at the highest level your school offers, or the highest you think you can handle, is better.

I'm Jackie, and going to be a part of the Class of 2018.
Strive to excel in the Scholar, Athlete, Leader categories as much as possible.
As much as you are graded on a point scale, WP is extremely holistic as well and takes everything into consideration.
My key points of advice to you include:
Max out on the CFA as much as possible. Yes, you're a female, yes the standards are lower for us than makes, but never meet the standard always go above and beyond. Every point in the end counts towards you, not against you. (However, if you do 50 which is the max for push-ups going over the max will not help your score)
Girls State is GREAT---I went and not only is it a fabulous leadership experience but it is also great on your WP resume
Mail every interview. Clean, professional look stare them in the eyes and be clear with what you want and what you hope to achieve at WP and beyond.
Motivation: you must be motivated yourself. This cannot be fulfilled by your parents, your coach, or your friends. As much as your parents should help you, they should not be helping you more than signing papers and giving you rides to interviews etc. This is your life, your call.
3.7 is good. But bump up those ACT and SAT scores I advise you take both as many times as possible to max out. You must meet the average ACT SAT scores---that can only benefit you. Above average would give you more points, more points the better.
Lastly, if you are a Scholar Athlete and Leader, and extremely motivated to go to WP and show it by following up with thank you notes, calls, updating your profile, etc,. That appointment will come. As far as not getting in under a "quota": you cannot help the cards you are dealt in life; however, it is entirely up to you how you play them. It is foolish to ignore what you have...it might be a trump.

take a college level trig/pre-cal course now/over the summer so that you can prove you can do the math.

The nomination is CRUCIAL. You cannot attend an Academy without one. Work on that. The process is similar to a college application complete with interview.

Goals, not Quotas:
If it makes you feel better - West Point does not have quotas - they have goals.

If the American Indian goal is 3%, then WP will strive to meet that percentage, but they aren't required to.
Also, there are goals for women, scholars, athletes, leaders and soldiers.

SAT/ACT:
I think you've heard loud and clear that you need to raise your scores, especially, Math.

I scanned your thread and there is a lot of advice given about the road to getting into WP, but little said about staying in. I tell candidates after they receive their appointment that "you are over the hurdle of getting in, now the challenge is to stay in". Your Math score is way below standard. Standards met, mean you have the potential to be successful. Find a good Field Force Rep, that believes in you based on all your other accomplishments and your desire to attend the academy. A good FF Rep can really help you get the Prep or Civil Prep opportunity. The Diversity Outreach Officer in your region can help you be as competitive as you can be, but the standards are rarely lowered to accommodate an individual. It might take you more than 1 year to obtain an appointment. It did for me, and 30% of each entering class has post HS education. If you are OK with that, work towards your goal. Good luck!
