Window tour USAFA : Food ideas

We are doing the window tour of USAFA this weekend. Any suggestions on a good vegetarian and salad place around the academy?
 
Better check in advance as I believe the campus is still closed to no DOD holders. Driving by from the interstate is worthless. Unless you can actually get on campus it’s kind of a waste of time and money.

The window tour is what is being offered instead of in-person. We’ll just be in our car when driving thru the campus and take the tour.

Urban Egg is great for breakfast and lunch (up Briaragte exit off of I25). Menya is a poke bowl restaurant that is kind of poke fusion (Korean and Japanese) and is excellent (in the Briargate shopping center). Mod Pizza is really good and you pick the toppings (all for one set price). They also have the same set up for salads. It's on Northgate exit at the north end of USAFA.

Just received an email back that base is open for ‘windshield’ tour.
 
That is fabulous to hear. Wish you could see the cadet area where all the day to day takes place but at least you can get on base/campus, very good news.
 
Too bad you won't get the full experience. I was going to recommend taking a tour of the US Olympic Training Center, but it looks like they're closed also :(
