I was curious about the AFT/PFT tests you take during BCT. Are the events still 2 minutes or 1 minute? Also any other information would be great.
 
AFT - 1.5 mile run
PFT - push ups and sit-ups are two minutes, the time between push-ups and the run is basically zero (the longest I had was maybe 45 seconds) and that run is 100% misery, I can't remember if pull-ups are timed, I don't think so, but if they are it isn't a factor for most. Long Jump is a standing long jump.

Is the AFT and PFT taken on the same day? Also do you take these tests every semester at the SA or every year?

They are not taken on the same day.
They are administered every semester.
They are not official during BCT.

If you validate, or score high enough, you do not need to take that test (AFT or PFT) the next semester.
This year to validate the PFT is 401 points, 1 pt extra so people don't max 4 and completely skip #5. For female AFT is about 10:45.
If you score too low, you will be placed in remedial physical fitness group.
If you max, then I think you get a pin and part of 500/1000 club.

Is 401 points the passing score or the score so you don't need to take it again the next semester. If it isn't the passing score, what is the goal? Also how does the scoring work?

Passing is around 250 points (someone correct me if i'm wrong!)
Validating is 401 points
Maxing of course is 500

Do as well as you can - in everything. PFT/AFT are important because they roll into your athletic GPA.
Think of it as 3 GPAs - academic, athletic, and military. All three roll up into an overall GPA, and everything works on rank.

Good question about goals. It is up to you to parse the information provided, the "award" or "reward" levels, and set your own goals. My DD says, everyone is doing amazing things! That does not mean everyone is doing everything amazing. Some make a goal of 500/1000 club. Others could care less, and have a blast in remedial fitness. My DD's goals are to validate. I don't know scores to points, and IMO that's too much detail for now - really it's good to know some general things, rather than the specifics of how many points a pull up equates to.

Look up the core curriculum handbook (usafa website/academics/core curriculum/handbook), pages 47-48 (4-10, 4-11, and 4-12).
 
I took the AFROTC PFA recently, but my height was measured wrong (I was in shoes). Should I just take another measurement and submit the scores I already have or redo the entire PFA?
 
Score to pass is 250, however you can fail the PFT and stay off reconditioning if your cumulative PEA is above a 2.0.

Score to validate is 400+. All the events in the PFT are 2 minutes with 1 minute rest between the. There’s about 3-4 weeks between the AFT and the PFT usually. AFT is outside on the road (no longer the track) during the fall and then on the indoor track in the spring typically if it’s cold. This gives quite the incentive to validate in the fall because running in the indoor is awful.
 
It’s all fun and games until they don’t let you drink water during the pft, so your throat basically is sandpaper and you taste blood.
