Just wondering if there is anytime to hit the gym while at UPT. Can any trainees or grads chime in? Is it doable to workout with the 12h work days and studying?

You'll make time or you won't. Fitness is your responsibility, and long days are a thing you'll have to deal with.
There is a chance that your leadership will let you go during your duty hours, if you are not flying or briefing, but on days your schedule keeps you busy all day, it's still up to you. I'd advise making a habit of doing PT now, as it's harder to break a habit than create one when you are busy.

There is time. People who say you can't never made it a priority. I was able to hit the gym for minimum an hour a day, every day, throughout UPT. I fully believe it actually helps performance to take that time, not worry about studying, and take care of yourself. The key is being smart with your time. If you aren't able to go during the duty day due to Formal Release, use those 12 hours to do all your studying. I promise you, after 12 hours in the books, there is no additional benefit studying at home.

Life only gets more hectic for pilots after UPT. Get in a good habit now and it will have huge payoffs down the road.

My son just graduated UPT in August. It will be hard but not impossible to do so. At some points, you are are on base for 12 hours, sometimes 6am - 6pm and sometimes its 8am - 8 pm. The only thing you will want to do afterwards is eat dinner and go to bed. The weekends will be open for more pleasurable activities, so finding an hour to workout will be up to you. However there will be times where it wont be 12 hour days and finding time wont be so hard. Play it by ear and see what happens.
