Can we answer all three essays even though they only require us to write two of them for the application? Will it be beneficial to my application to answer all three?

You should follow the directions implicitly. This is a service academy and following directions is part of the curriculum. It will not benefit you in anyway, shape, or form to answer three questions when they ask you to answer two. You should also follow the directions according to word count. It would benefit you to write them in Word and then have your English teacher or a trusted friend/adult look over them and then transfer them into the section in your online application.

Try it

It will only accept 2 of the 3 and will error if you enter, if I remember correctly. Even if it would accept three, it would perhaps give the reader a perspective that you do not follow directions. Pick your best two and be done with it.
