I have 19 credits from tech school that's used towards my CCAF, and I often forget that it is considered the same as enrolling in a college, so I left it off of my application portal. My question is for the supplemental documents. Should I send in my CCAF transcript with my other college transcript or since my private college mentions transfer credits and my tech school does not provide a GPA I should leave it out?

I would recommend trying to get your CCAF completed. I can tell you that if you mention a "CCAF transcript" to your counselor there is a high probability they will annotate your file and you will have to send it in in order for your application package to be considered complete. I would recommend CLEPing some things as well. There are several resources available to assist. My DS was 3 for 3 on his first attempt. You can also transfer AP classes from high school to your CCAF if you had a 3 or better on the exams. Knocking out your CCAF is a way to show USAFA that you are serious about your academics. Depending on your standardized test scores it might be a game changer. Your education office should be able to look at what you have taken and lay out a path for you to complete it quickly. Hard chargers are able to knock it out in a year after arriving at their first base (because that is how long it takes to get your skill level upgrade credit that is required for a CCAF).

Thank you for the advice. I'm hoping to finish it this winter.
