I only have 1 credit of Spanish as a foreign language. I plan to begin applying to the academy this fall as it begins my junior year. Will this disqualify me from being considered?

Is second-year Spanish available to you next year and, if so, will you be taking it? I believe they’ve said they like to see two years. If it’s available to you and you haven’t, it might be frowned upon. BUT, there are lots and lots of other variables that go into your file and that weigh in on the final decisions.

To echo THmom, I recommend that you take the 2nd Spanish credit if it's available to you. USAFA also considers your senior year courses (and grades) so don't sweat. As I'm sure you've heard before, just continue to strive for your best in your classes.

If you look on the academy website you'll note they "recommend" two years of a foreign language, it is NOT required.

That being said, I'm a linguistic "nut" so I'd say if you have the opportunity to take another year, do it! One thing I think we lack in this country is multilingualism. It's a great benefit if you do any business with anyone outside the USA and today...that's VERY common. It was also an advantage during my AF career.
