What is the deadline to accept an Appointment? Do not want to risk it being taken away if taking too long to accept (waiting to accept with special person (Active Duty) there also - but will not see them until late March)...
 
Typically May 1, which is the generally accepted Decision Day for colleges throughout the U.S. There can exceptions, i.e. you receive offer of appointment in late April (as happened to DD with USAFA) or mid June (as happened to DD’s NASS squad leader).

You might consider going ahead and accepting now. The paperwork that will follow can take time... as you already know. I would think about accepting over FaceTime now with the special person possible. Get the paperwork started.
 
We have done this facetime from overseas. Accepting the Appointment is a great thing to share in person but there will be many more events also. Sure your special person will understand your efforts and be excited with and for you. If you are ready to accept work a couple plans to include your special person at the earliest possibility and make it happen. It will be a great memory for everyone despite the circumstances.

Military life means many special events and holidays don’t actually happen on the designated calendar day. Your special person is AD, so they will understand being flexible, creative, adaptive and cheerful about challenges.
 
Accept the appointment now--if you are ready.
You will not receive the follow on paperwork--like for the security clearance until you have accepted the appointment.

Last year DS waited to visit USAFA early April, they had a 4/15 deadline so his effective date was a couple weeks early.

But if this is your clear 1st choice and you are not waiting to hear from other universities etc then take advantage of the extra time and accept IMHO.
