Important matters concerning the existence of Humanity - BACON

Somehow I missed Bacon Day! In apparently unconscious celebration, I had a bacon, thinly sliced Granny Smith apple and Swiss on toasted, buttered Kasanof’s marble rye for dinner. I’m only up now because I fell asleep during the Orange Bowl with two snoring boxers. I may have been snoring too.
 
At the risk of giving up my secret identity, I will need to invite you all next fall in my hometown's Baconfest. An entire weekend devoted to all things bacon. Streets closed down for bacon appetizers, main courses, breakfasts. Bacon beer. Bacon ice cream. I tearing up just writing about it...
 
I just learned that a totally different level of culture associated with Bacon exists in this world!

I also realized that I have had a very biased perspective on foods. I always thought chicken rules the food-worlds/industries (?) because my family eats chicken a lot! I started wondering if I could stay in the forum for a while since many good senior members, mentors and parents here prefer "Bacon" to "Chicken."

I now feel like "Go Bacon! Beat Chicken!" behind all contexts in the threads.
This forum has not only expanded the horizon to SAs but also opened the door to a bacon-oriented culture.
I will ask my parents....."Why.......? I am wondering why we have never tried Bacon so badly?" "Why only chicken?"

I just checked that there is an unpacked "Thick-Sliced Bacon" in the refrigerator that's been there for over one week. No one cares.
So I will try Bacon tomorrow morning since this thread taught me a true meaning of Bacon and....made my mouth water so much!

Sometime try bacon AND chicken. Together at last!!!! 'm pretty sure there is bacon in Coq Au Vin, and if there isn't, there should be.
 
Sort of a bacon post... salt pork is pretty close to bacon, right? Tonight I'll start soaking the black-eyed peas for a batch of Hoppin' John to be consumed on New Years Day. Another recipe to try in my new Instant Pot.... after the tomato soup and the pot roast. I've only made Hoppin' John once and it came out awesome. I hope to report similar results tomorrow. I don't know if it's a southern thing or an NC thing but you have to have Black Eyed Peas and Collards on New Years for Health and Wealth!

Yeah, my wife is in charge of the collards. I can't eat much (and shouldn't eat any). The vitamin K screws up some of my meds. I will have some tomorrow though.

Country ham biscuits... yum. Is country ham considered bacon? It should be!!!
 
Pig is generally good. I will be making sugar-free cornbread in the cast-iron skillet with cheddar and bacon to check the bacon block. BECAUSE I LIKE IT, I say to cornbread aficionados who don’t like additions.

Yeah, I know. Cornbread ought to be gluten-free already, right? Nope. If you make it from a mix, check the ingredients. Corn meal usually takes a back seat to wheat flour and even sugar, in a lot of boxed cornbread mixes.

Don't get me started on canned pumpkin pie filling being mostly squash, these days.

And that's why I start with raw pumpkins.
 
Sent DS off at airport this morning to return to his home away from home.

Came home and made fried potatoes with bacon. Watched Naptown Funk. Felt better.
 
Ah yes, I was over at the Yard a while ago walking the dogs after the Saturday Naval Bagel stop, and Mother B is slowly waking up again. No one looks particularly thrilled. At least the bricks aren’t icy.
 
We went to a wedding recently and at the reception, they had all these different food stations you could get appetizers from. My favorite was the 'Bacon Bar'!!
