Important matters concerning the existence of Humanity - BACON

Speaking of favorite hangouts....here is our local one. All things bacon. Buckets of bacon. Ribs wrapped in bacon. Bacon dipped in chocolate...also the home of a Man vs Food episode, the Adam Emminacker (a local basketball player) challenge (yes we have ordered...but as a shared meal). DELICIOUS food and drinks.

Bonus points for their treatment and acknowledgment if our military 🇺🇺🇸💙

+10 to @justdoit19 for living in a place that is home to a restaurant with bacon in the name twice.

There is soooo much bacon in that place, they HAD to use it twice It’s just up the street from DH’s work.

Interesting side note,the original store’s menu smacked of Ellie May, Jethro, etc. An obvious nod to the Clampets. Owners were sued, and all they could keep was their name “Jethros”. There are 4 locations, each with a theme. The other one we enjoy is their Jethros Pork Chop Grill. There’s some bacon there as well!

I propose it is the T-minus 10 day period before Iday. A weirdly melancholy, sometimes denial, emotional time when everything is pretty much done, and just waiting for stuff to actually happen. Parents are here for a diversion (me). Others don't have questions anymore (most have been answered, stuff is done). The apps for the next cycle aren't out yet. Its just kind of a weird suspension in time.....
 
@Capt MJ , DH makes a version of that with baked, smashed, and crisp-fried spuds that is TDF. His ancient grandmother - still kickin' at 97 and living on her own (with a bit of help), asks for "that smashed potato salad with the bacon in it, and make sure there's some extra for me" when we have a family get-together. We will have to try this grilled version. Like the idea of sherry vinegar.

This morning DH casually mentioned he bought a 12-pound lean pork belly from the local packer who had extra. (Who TH has extra pork bellies laying around?? But I digress.) It's currently hanging in a moderate cooler, aging, and DH will pick it up on Thursday, break it down, brine it and smoke it for our bacon. As an almost, aspiring, wanna-be vegetarian, my reaction to this was like watching Metallica play with the San Francisco Symphony Orchestra: initial horror, a bit of nausea, then intrigue and finally acceptance.

(Also: I still have that DVD, if anyone's interested...I hear they can fetch up to $200 on eBay.)
 
For DH today, I have a flank steak marinating. Bacon cheddar homemade biscuits, flecked with red pepper flakes. Spinach salad. Dark chocolate brownies with raspberry ganache. All the favorite food groups except PB.

This morning for Father's Day, Sprout (10), who is an independent and pretty good cook, cooked an entire pound of center cut bacon for his dad and the two of them polished the whole thing off. They're now lazing in the backyard like a couple of beached whales. 😁
