USAFA is looking for people who are strong in leadership, academics, athletics. ECAs ideally contribute to those.
Athletes are recruited not just for physical fitness, but for skills and traits that often go with participation in organized sports: leadership, strategic planning, results-driven, problem-solving, time management, decision-making, risk analysis, work ethic, physical toughness, mental determination, focus, resilience, adaptiveness, self-discipline, and others. As noted, there is a formal process for that.
For you to have achieved success with your YouTube channel probably indicates you have some desired traits and skills of a future AF or SF officer. That is USAFA’s mission: to produce professionally trained officers to replenish the ranks of AF and SF.
If you are offered an appointment, your skills with videos might make you a valued asset once the academic year starts for cadet-made spirit videos. I’m using the Navy term for videos made before football games, particularly SA-SA games.

If you haven’t run across Rylan Tuohy’s YouTube channel yet, he was legendary as a USNA midshipman and later as a Navy officer for the videos he made. And is still making, in hs civilian career.
