Fun Fact: Trader Joe's sells a 1 lb. package of applewood smoked, uncured bacon ends and bits for $4.49/lb. No nitrates, nitrates, phosphates, or sulfates. It may even be the healthiest thing you could ever eat (that is, compared to the other stuff on this thread).
I use it for tomato sauces and for broccoli rabe, inter alia.
Quick broccoli rabe recipe: render the diced bacon fat, add a lot of garlic and some red pepper flakes, remove the goldened garlic and crisped bacon bits to add back later on, saute washed broccoli rabe, cut into thirds or so (bottom half inch trimmed and offered to the dog), add stock (chicken, beef, vegetable, or water) to cover, bring to a boil then simmer for a while. Bonus sweetener if you add ribbons of sun-dried tomatoes. Great by itself as a side dish or mixed with pasta and sausage - even better the second day - and topped with pre-tariff cheese.
